Remember those red, white, and blue popsicles from the ice cream trucks of your youth? We took a childhood favorite and gave it a grown-up makeover (times two) with nutrient-rich, plant-sourced ingredients like fresh berries and dairy-free coconut yogurt. The result is a seasonal treat to delight all ages.

TIE-DYE FIREWORK POPS

INGREDIENTS:

  • 1 container of coconut yogurt (we love Anita's)
  • 1 container of organic blueberries
  • 1/2 container of organic strawberries (stemmed and chopped)
  • Wooden popsicle sticks (OPTIONAL: for a fun surprise, write messages or mantras on the sticks)

DIRECTIONS:

1. In a blender or food processor, puree chopped strawberries until smooth. Pour strawberry puree into a bowl and set aside.

2. Next, puree blueberries until smooth, pour into a bowl and set aside.

3. Pour strawberry 1/2 inch–1 inch of puree into popsicle molds. Follow with 2 tablespoons of coconut yogurt. Fill remaining space with blueberry puree.

4. Use a popsicle stick, knife or skewer to swirl mixture, creating a tie-dye effect.

5. Insert popsicle sticks into molds and freeze for at least four hours, or overnight. Enjoy!

 

COCONUT WATER QUENCHERS

INGREDIENTS:

  • 1 bottle of unsweetened/unflavored coconut water
  • 1 container of organic blueberries
  • 1 container of organic strawberries, thinly sliced
  • Wooden popsicle sticks (OPTIONAL: for a fun surprise, write messages or mantras on the sticks)

DIRECTIONS:

1. Place a few sliced strawberries and blueberries into popsicle molds. Fill molds with coconut water, adding a few more pieces of fruit if there's room.

2. Freeze popsicles for about an hour to set before inserting sticks into molds. Once the sticks are in, allow pops to freeze overnight. Enjoy!
