In honor of Pride— a month that celebrates freedom of being one's true self, the healing power of love and honoring those who've fought for LGBTQIA+ visibility and rights — we advise you to honor your body with this technicolor recipe. Consider this the on-theme fuel before heading out to the Pride March (on Sunday if you're in NYC!), or serving to friends + family all summer long.
We love this recipe because ~Eating the Rainbow~ is both a visual feast and a pillar of nutrition, as the more colors are in your food (naturally!), the more phytonutrients are bioavailable. Reds mean lycopene, quercetin, anthocyadins; blue and purple include flavanoids, resveratrol and phenolics; yellows and orange note beta-carotene, lutein, beta cryptoxanthin; and white means glucosinolates.
These vitamins, minerals, antioxidants, etc. are bursts of color on your plate that you need. Celebrate yourself, diversity, summer's bounty— with this goodness:
Eat The Rainbow Skewers:
Ingredients:
skewer
- Red- organic Watermelon
- Red/Purple- Dark cherries
- Orange- organic Cantaloupe
- Yellow- organic Pineapple
- Green- organic Grapes
lemon-ginger drizzle
- 3 pink lemons
- tablespoon fresh mint, chopped
- 1 teaspoon of fresh ginger, grated
Directions:
-slice fruit into small, edible pieces
- place on the skewer in rainbow order
- in a bowl, whisk the juice of pink lemons, tablespoon chopped mint and a teaspoon of grated ginger (play around with proportions for your flavor preference)
- drizzle over fruit skewers
- enjoy!
