INGREDIENTS

  • 1 can of chickpeas
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon pepper 
  • Juice from ½ lemon
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika powder
  • 2 tablespoons nutritional yeast

 

 

DIRECTIONS

  1. Preheat the oven to 400F.
  2. On a baking sheet lined with parchment paper, toss chickpeas with olive oil, salt, pepper, lemon juice, garlic powder, paprika, and nutritional yeast, ensuring the chickpeas are well coated. 
  3. Place in the oven and roast for 25-30 minutes until crispy. 
  4. Let cool and enjoy!

TIP: Add a handful to your salad as a nourishing substitute (or addition) to croutons.
