We developed this soup as a simple and delicious way to nourish your body—particularly your skin—from the inside out. This straightforward, delicious gazpacho is a powerful way to eat your water, thanks to its high water content (about 90 percent!). Melon is particularly great for flooding the body with H2O, as are cucumber, celery, and leafy greens. Chlorophyll-rich, dark greens like spinach, promote tissue repair while the antioxidants defend the skin from agents that actively break down collagen. It's our secret recipe for a glowing, radiant complexion. 

Ingredients (Serves 2):

  • 1/2 English cucumber, roughly chopped
  • 1 stalk celery, roughly chopped
  • 1/4 cup honeydew melon, roughly chopped
  • 1 small green tomato, roughly chopped
  • 1 packed cup spinach
  • 1 teaspoon lemon juice
  • 1 teaspoon lime juice
  • 1 teaspoon extra-virgin olive oil
  • 6-8 basil leaves
  • 1/2 small shallot, roughly chopped 
  • 2 tablespoons coconut yogurt or coconut milk
  • Pinch of Himalayan salt

 

Directions:

1. In a blender or food processor, combine all the ingredients and blend until smooth. Enjoy right away or chill before sipping (the flavors become stronger as it sits). Store in the fridge for up to 3 days.
