These days, we're relishing peach juice dripping down on our arms, a bowl of bright red cherries shared with friends, a glass of Green Lemonade in the afternoon, and a smoky cocktail sipped at sunset. These sensual experiences also pack in the nutrients; stone fruits like peaches, for example, are rich in antioxidants including lutein and zeaxanthin, as well as polyphenols which hydrate and brighten skin tone...so you look and feel radiant, too. 

While peaches are perfect as is—just bite into the flesh and enjoy!—if we have any extra in the house, we're using them as the star for this simple, hydrating salad. The mix of bitter greens, cucumber, and peach create the ultimate meal to "eat your water."  

As opposed to only drinking enough fluids, the slow-release of the water within food takes it one step further; trapped in a web of nutrients, fiber, and unique vitamin and mineral makeup, the water moves through the digestion process, being fully absorbed by the cells and organs, so you're hydrated for longer and deeper. This has an important impact on the skin barrier, GI tract, and immune system...bringing a new, deeper meaning to "soak up the summer." 

 

Ingredients:

  • 1 ripe peach, chopped into bite size pieces
  • ½ cucumber, shaved or spiralized
  • ½ cup bitter greens (frisée, radicchio)
  • ¼ cup microgreens or sprouts
  • 1 sprig of mint
  • 2 tablespoons soft, creamy plant-based "cheese" (suggested: Monty's, Blöde Kuh, Spero)
  • Vinaigrette of your choice (suggested: Youth + Beauty Salad Dressing)

 

Directions: 

  1. Place shaved/spiralized cucumber into a bowl with bitter greens, microgreens, mint, and 1-2 tablespoons lemon vinaigrette. Toss well until evenly coated.
  2. Place cucumber, greens, and mint on a plate and top with chunks of peaches and a few small spoonfuls of your favorite plant-based "cheese."
