The ultimate nourishment for secret garden soirées and weekday lunches alike. Atop a slice of gluten-free bread, we piled on a refreshing, deeply hydrating veggie blend—consisting of cucumber, radish, and tomato—to promote seamless digestion,
buoyant skin, and eased inflammation.

 

INGREDIENTS

1 small cucumber, diced

1 radish, diced

1 tomato, diced

¼ cup fresh dill, finely chopped (or 1 tablespoon dried dill)

¼ cup fresh parsley, finely chopped

1 teaspoon apple cider vinegar or lemon juice

1 garlic clove, minced

1 teaspoon olive oil

1 slice gluten-free bread, toasted

2 tablespoons non-dairy probiotic yogurt 

Salt + pepper, to taste

 

DIRECTIONS

  1. In a bowl, combine cucumber, radish, tomato, dill, parsley, apple cider vinegar, garlic, olive oil, salt, and pepper. Mix well.
  2. Spread yogurt on toasted bread. Top with fresh vegetable and herb mixture. Enjoy!
